Hon Tsai Tai can grow up to 12" tall, purple leaf stalks and veins, dark green leaves, and yellow flowers. Stems are similar to young purple broccoli and have a mild, sweet flavor. Hon Tsai Tai can be grown all year round in a mild climate, crop can be harvested in as little as 40 days after sowing. Best grown as a fall/winter crop-the plants will bolt early when sown in spring to summer. Hon Tsai Tai can be cut young and will re-grow for additional harvests. Prefers cool temperatures. Prepare fertile, well-drained soil. Sow seeds in late summer/early fall. Keep soil moist. Fertilize as needed. Harvest main stalk when it reaches 10-14" tall and just before flowering occurs.
