Harvesting: Harvest cucumbers when reach the desired size and are green in color. Cucumbers for slicing are best picked when they are 6-8 inches long and 1 inch or more in diameter when mature. Cucumbers grown for pickling are best 3-4 inches long and up to 1 inch in diameter at maturity. Either type can be used for pickling if picked when small. Try not to wait until cucumbers turn yellow because they will be over-mature and have a strong flavor.
