The leaves are used as a substitute for spinich in dishes. The leaves are also used as salad greens. It grows 4 to 5 feet tall. When mature it develops seed heads. The seeds need three to four weeks of cold refrigeration to break the dormancy of the seeds. You may start the seed indoors or directly in the garden in Fall or early Spring. When the leaves are steamed with butter, it tastes very similar to spinach.This plant is highly adaptable and grows greenish-blue leaves rapidly. Each plant produces large amounts of seed that allow this plant to reseed very easily. It will grow all by itself year after year. All you need to do is harvest the leaves and allow it to reseed itself. The leaves can be picked as soon as they start to grow and all the way through late fall. Lambs quarter is a purifying plant that helps to restore healthy nutrients to poor quality soil. This plant prefers full sun and moist fertile loamy soils though it tolerates partial shade and a range of soil types. These plants are not picky to grow and will generally grow almost anywhere. It can grow either in full sun or in partial shade. The plants can also tolerate drought well. So, while selecting the site, consider availability of sun and ensure good drainage system.The Lambs Quarter plants can be grown in a wide range of soil types. But the plants will grow better in loose soil which is rich in organic materials. So for preparing the soil, till the soil and add organic materials into it such as aged manure or homemade compost.Lambs quarter plants are grown from seed.
