Collard Greens This is one of our favorite vegetables to grow in the garden! Fresh Collard greens picked just before being boiled are the best!! Cut a few stems, wash & cut into 1-2 inch pieces. Bring a pot of water up to boil & add a tablespoon of butter. Cut up 3 garlic cloves & toss in too. A little seasoning like Completa or Old Bay tastes great! Put the greens in and cook for 30 minutes on medium heat. Papa likes to finish his with Apple Cider Vinegar. Baby girl likes hers with Texas Pete Pepper Sauce. Heat and cold tolerant, and does well under adverse conditions or in poor and sandy soil. Plant grows to about 3 feet in height. Leaves are large, upright, and blue-green in color. Direct sow. For smaller plants, plant a few seeds every 12 inches and 1/4 inch deep; later, remove all but the strongest plant. For larger plants, plant seeds about 2 feet apart. 80 days to maturity. Begin harvesting leaves when plant is about 10 to 12 inches high. Try tossing the cleaned, chopped leaves into a pressure cooker with water, ham or bacon, and diced rutabaga.
