I tried to show you the plant in all stages of growth, but the last photo shows my trellis with the Yardlong Noodle Beans on the left side of the arched trellis and one luffa gourd plant on the other that has taken over the entire arched trellis and both horizontal trellises leading back. The Noodle Beans did make a beautiful and dreamy pathway into my garden before the luffa went wild! I highly recommend growing them on an arch. It makes the beans very easy to find too! Red seeds produce high yields of 16-20” long, burgundy-colored beans that turn green when cooked. Has a very pleasant, earthy flavor reminiscent of asparagus when sautéed. Sow 3 – 4” apart for trellis/pole growth after the last frost with soil temperatures above 70ºF. Planting in soil 60ºF results in poor germination. Harvest at about 18” while still tender. It doesn’t take very many beans to make a side dish for two!
